I haven't a clue about bikes, it looked like everything was normal then his bike hit an invisible step.

It's what's known as a Highside. Rear wheel loses traction and then regains it and that force or torque kind of twists the bike and throws the rider off.
That one is actually pretty tame and he was lucky there was that open ground to the right (bar the fucking tree).
Search YouTube for Highside. Some of them are crazy.
