Pan-fried Portobello mushroom, cheddar and mozzarella sandwich with French fries and confit San Marzano tomatoes.|
I fucking love that sandwich. It's a bit time consuming to make but cooking the mushrooms nice and slow with butter, thyme, garlic and lots of salt, finished with a bit of parsley is a joy.
The sandwich is made with farmhouse white bread, and a generous smear of Dijon mustard. Cheddar goes on first, then the mushrooms, then the mozzarella. The sandwich is pan-fried in more butter until it's crisp and golden, and finished with a bit more salt.
The fries were the first batch in new oil. Skin on, thrice-fried, finished with plenty of rock salt and a little parsley.
The tomatoes were slow-roasted (about 150C fit an hour) with whole cloves of garlic in olive oil for about an hour. I mash it all together so it's a bit like a jam; perfect for dipping both sandwich and fries in.
Vegetarian food often fails to deliver big savoury hits but this meal is a proper banger.
