Served it with braised mushrooms, griddled broccoli, mash and a quick-and-dirty peppercorn sauce. You can't see it because of the sauce, but it's bang on medium rare. Side note: when one reverse sears beef, one does not get all of the lovely burned on bits in the roasting tin. I did not know this. While the beef is amazingly tender, it's basically impossible to make a pan sauce. Hence panicking and throwing a peppercorn sauce together. Edited by G0atApocalypse at 18:35:31 03-07-2021 |
