Can anyone explain what the benefit of being unhollowed is about. I understand I can ask for NPC help for bosses at particular points but apart from that I'm struggling a bit.

Do you receive humanity more when unhollowed?

I re-rolled a sorcerer after starting the game with a Bandit even though I was trying not to after being a magician in Demons' Souls. Finding the game a lot easier now due to having a decent ranged attack and knowing the starting areas well.

I would recommend starting a new character for anyone getting frustrated with the game. It's amazing how quickly you can nip through sections with the benefit of hindsight. Very similar to Demons' Souls in that respect.
