Dodging is more effective than blocking. I found even with a 100% shield I still took damage from certain attacks (dark damage?). The easiest attack to deal with IMO is the charge. Put some distance between yourself and the boss, it will charge, roll in the direction that has the most space. Land a shot or two on it's side and back off a bit.
