    With regards to point 1, that's down to the number of patches / refinements over the years. There has been a ton of pruning and repurposing of actions through the years, and also a design choice to not overload each job with endless lists of actions. FF11, by comparison, has some jobs featuring hundreds of possible spells. I wish there was more abilities on offer at lower levels, or lower level versions of later abilities - this does become a thing for lots of jobs where earlier versions of abilities and spells are replaced by their better versions.
    There are some classes like Archer that seem particularly hard done by this redistribution. That said - don't forget your Role skills (available from the Actions and Traits menu if you haven't already got them on the bars. Some things won't be massively earth shattering, but some can be crucial to how the melee classes play (looking at you, True North).

    The ARR zones that you're currently in are pretty small, and yeah the fast travel can make it easy to overlook some of the details. I think my favourite original zone is the South Shroud as it seems to cover off a really large amount of variety in the space.

    As for the story, if you're roughly on parr with the MSQ level to your Ninja level, then there's some pick up on the horizon.
