I'm only in the first two lands. When I tried going north, guardians fried me.

Shrines are completely optional, so Yes.

That said, I entered a combat shrine just off the coast of a beach very early in the game and decided to high tail it after getting stomped into the ground.

It was very satisfying fast travelling back there a few hours later when I'd received some half decent armour (just from progressing with the main quest line) and had a few more heart containers!
