Right EG, I need some pan-buying advice. I have no idea what I'm doing; my cookware is a mishmash of inherited stuff and stuff I've bought on sale. I find that I only really use the frying pan, and a big or small saucepan depending on what I'm cooking. The frying pan is fucked so I thought I'd upgrade.

What's best? Non-stick? Stainless steel. People say the non-stick pans don't last as long, although I've no idea how you're meant to fry a decent egg in a pan that isn't non-stick. I understand you can season pans to make them non-stick? I'm a total dimwit about all this.

The one thing I can't have is something too heavy. The cooker is one of those glass ceramic things, so a cast iron pan is a big no-no as I'd almost certainly drop it and smash the hob at some point.

Carbon steel pans are a lot lighter than cast iron, but should last generations too. Both types are a massive pain in the arse to keep seasoned though, and I've realised just aren't for me.
I'm also a little unclear on the health benefits of them... Iron is obviously good even in the minute quantity these pans leech out, but the seasoning is oil that's been brought to smoking point, so a literal carcinogen...

I went with a Tefal titanium excel frying pan (with a metal handle so it can go in the oven under 200), but it's already a bit crap for eggs after a couple of months, so not sure if I'd recommend it or any other nonstick pan.

So yeah, I've probably been no help whatsoever!

Nah, it is helpful. I didn't think about the heated oil.

    I might just get a low-mid quality non-stick pan. It's not like I"m a chef or anything.

@Rum_Monkey well Sainsburys ones are not so bad. A £2 straight from the freezer section one would be horrific (I've had the misfortune) but these ones are OK.

Roast beef. I'm not allowed it very often. I've been starving myself in anticipation.

Burgers with a fancy onion/rosemary ciabatta roll bit of homemade onion chutney with red wine and a topping of salads and burger sauce and a nasty slice of pre-made cheese slice.

    Chunky chips.

    Cold beer.

    Feet up.

We all have our crosses to bear. She's not a massive fan (especially as I like it rare, she prefers medium), and neither of the kids like it either so it's really just for me. All for me. Gravy was banging too, thanks Delia.

Ciabatta rolls are Ok should’ve stuck with the classic brioche burger roll.

Bit of red wine if you’re doing your own onions works a treat !

I’m making that pork belly thing again. I’m sat watching through the oven window as the skin starts bubbling and crisping.
