    Anyone a pan fry guru? Made some flattened spicy panko coated chicken breasts. Fried in a pan with enough oil to just coat the bottom of the pan. On a medium heat when the oil was slightly sizzling, four mins either side. First side ended up quite charred. Not enough oil? Pan too hot?

    Tip me up.

    Sounds like not enough oil to me. Also, this sounds counter-intuitive, but I'd want the loan really hot when I put the chicken in and then I'd turn it down quite low.

    Chorizo and chick pea stew for me. Instant potted, tastes ace.

    Has anyone ever made pineapple crumble? I've got some mates coming round soon for a pre-christmas feast and a couple of them are vegan + gluten free, I'm trying to think of a non-depressing crowd pleasing desert. The mains are Caribbean themed which is all cool, I'm making 3 versions of the same main (pepperpot stew, one vegan gluten free, one chicken mild heat, one beef atomic heat) but I totally can't be arsed making multiple deserts. I was thinking pineapple & stem ginger bake with granola and desiccated coconut crumb, with vegan ice cream for the herbivores and actual ice cream for the omnivores. Sounds alright, right?

    Yes, not enough oil. I did this at the weekend, I maybe have 0.3cm of oil.
    Slice the breasts so they aren't too thick.
