    Tonight I'm having Roasted Pheasants fanny drizzled with some leopards arse juice on a bed of dough from Naples. Sides are cherry tomatoes and red squirrel winnets.

    A sort of pasta e fagioli, vegetarian style. It's delicious but boy did I overdo it on the heat. I'm literally in tears.

    We are having a slow cooked beef chilli using shin, with a sprinkling of crushed nachos, cheese and soured cream. Basically this but I couldnít get shin on the bone plus I adjusted the spicing and added some chipotle and cocoa powder:

    This was good but the recipe definitely needs adjusting. I added 1 more chilli, plus 2 tsps chipotle chilli powder and it was still very mild. Also it had way too much cinnamon so 1 tsp is plenty. Iíd suggest much more chilli next time, maybe more chipotle plus a smidge of habanero powder just to give it an actual kick.

    I used big chunks of shin rather than shin on the bone and it worked fine. I also reduced the oven temp to 140 and that was perfect for the meat.

    Shin is amazing for slow cooked stuff. Always my preference for a stew/casserole etc.

    It's Sunday, so roast chicken for me.

    My stepmumís pro-tip for gravy, use the meat juices obviously, then add a little bit of branston and a small squirt of ketchup. Honestly makes all the difference.

    I didnít parboil the potatoes which I think was a mistake. Hopefully everything will come together at the end. I always stress a bit with roasts but I havenít made a bad one yet

    Yeah, Heineken 0% isn't quite cutting it.

    Always parboil the potatoes. I have trouble remembering everything. Especially my fussy son's pie. He refused to eat roast chicken but will have a chicken and bacon pie. Sigh.
