It's really not that difficult to make, though. The layers make it seem more complicated than it really is. -

Registered 19 years agoI cook most of my evening meals from scratch, but that always looked like such a major endeavour. Never made pasta of any description mind, really should try one day instead of just boiling up the dried stuff. -

More of a weekend endeavor and then you have leftovers for the rest of the week. -

Registered 15 years agoMaking your own pasta isn't a necessity. I mean, if you don't know what you're doing you're probably better off buying the dry anyway. If you know what you're doing and have the time - obviously. But not a necessity to have good pasta. -

Mexican lasagna is awesome. Swap out the pasta sheets for crushed tortillas. You can also just slice up aubergine or unfurl leeks if you can't be arsed with pasta sheets. -

Works fine. Though I usually replace the ricotta with a sour cream/cottage cheese mix.
Brown the beef, stir in some taco seasoning, layer of crushed tortillas, layer of meat, layer of ricotta, repeat, sprinkle the top liberally with cheese (cheddar or mexican mix), bake until golden brown and bubbly. -

Pretty much, yeah. It's either called Mexican Lasagne or Taco Casserole depending on who you speak to. But it's ace either way. Especially if you use flavoured doritos instead of plain tortillas.
