Registered 2 years agoManaged to get one of the Kamado Aldi bbqs that keep selling out. Looking forward to smoking some meat (oo-er) this summer. Anyone got some recipes for dry rubs? Might see if Dale's cooking recipes are about still. -
Why is Dr Google so useless?
I'm apparently suffering from either congestive heart failure, clinical depression or having lots of side effects from the statins and other drugs I'm on for my heart. So at this point I should either be calling the doctor, stop being such a tit or requesting a meds review. -
Actual Doctor says it's probably not the drugs but stopping statins anyway just to shut me up, it's probably all in your head, stop being a tit. -

But if you have the ingredients, most use a base of:
Salt
Sugar
Chili Powder
Smoked Paprika
Garlic Powder
Cayenne Pepper
In various quantities and another ingredient to specifically complement the meat. Also buy a tub of american yellow mustard to coat the meat as it helps the rub stick. -

Registered 2 years agoYeah I've been looking at some sites and seeing the amount of sweet ingedrients in their rubs. I'll probably copy the recipes and leave out some of the sweeter parts.
Apparently a major part to getting the bbq right is brining the meat the night before so I'll be don't that. I'm going to be a pit master in no time. -

Registered 16 years agoI would honestly spend your effort getting the technique of using the smoker right and then move onto upping your meat game. Just the mechanics of it can be a proper pain in the arse at first, regulating temperature and all that. I would just do some cheap chicken thighs or something for the first few goes in case you fuck it up.
If youre relatively serious, this helps enormously because the built in temp gauges are usually shit.

Youve got one probe for cooker temp and one for internal meat temp, so you dont have to stand over it and watch it like a newborn baby.

Registered 2 years agoYep, already got one similar but does everything to your phone with alerts and stuff.
That's the good thing about these Kamado Bbqs is that it's pretty simple managing the temp as they retain it for hours without much change. I was round a mates for a bbq and he has one of those big green eggs and the temp didn't move at all, it was like a cheats version. Obviously I've gone for the budget version to get to grips with everything. -

Registered 16 years agoYeah, tbh, the decider is usually the fuel. Those cocoshell briqettes burn hot for ages and dont really smoke themselves. Ive struggled to keep an even temp for long smokes with anything else. -

Registered 2 years agoAh cool, I've been told to avoid coal that gives off a lot of smoke as it can basically give your food a burnt taste.
There's a local guy who does the different logs to add smoke flavour at decent prices which is handy so will be using those too. -

Same with BBQing, tbh. If you start cooking before its all embers, it makes the food taste rank. -

Registered 5 years agoYeah, you want glowing embers and for the chemicals to have burnt off. If you want smoke you add water soaked wood chips. But with a kamado it’s best to start simple. Just salt and pepper for seasoning and no fancy smoking, just slow and low on a brisket or something a few times to get the timing and technique down, especially the stall/crutch. Once you’ve got that down then’s the time to go all BBQ Pitmasters on stuff. -

Registered 5 years agoI’ve recommended him before but if you want a BBQ bible then Aaron Franklin’s book on it is pretty much the gold standard. He has a volume entirely about steaks too.
One of my few regrets in life is growing up only knowing a bbq as a supermarket instant grill in a foil pan with frozen burgers and cheap rusk-filled sausages. I’m making up for it now. -

Registered 2 years agoI'm pretty much the same, burnt burgers and sausages with a risk of food poisining from the chicken was the Bbqs I grew up on.
I've actually got pretty good at doing all sorts of cooking on a standard bbq so I wanted to treat myself to an upgrade.
Aaron Franklin is the glasses guy from pitmasters isn't he? I like him the most because he always says how simply he seasons his food.
There's a bbq showdown on Netflix that has a few of the Pitmasters contestants on it that's worth a watch too.
