* Ham boiled in Coke (just trust me, it really does work)Trust me, it doesn't. A friend of mine made this for us after the recipe was on one of Nigella Lawson's shows. It tasted like gone off meat and had a horrible fizzy aftertaste in your mouth, plus it makes the fat in the ham go all black which isn't attractive on your plate. We all gave up after a couple of mouthfuls. |

I have to agree.
The things you've listed are standard enough for me, who has absolutely no interest in food, to recognize as fairly standard pairings.
Opening post is full of reasons why talking about food with people is so bloody annoying.
Those people that think that Korma or Lasagne is the height of novelty has either never been to a restaurant or lives in the 60s.
A lot of people do however have preconceived notions on what is solely for dessert or main meal fodder. It's really about conflicting/complimentary mouth feel, flavours and what-have-yous.
Once you realise that you're fairly free to experiment.
My missus loves mint sauce and cheese sandwiches though. That's just plain wrong. -
I've boiled a joint of ham in cola. It was nice. -

What SH said. I decided to just have the pulled pork instead to be well behaved. Judgement error. It was a huge vat, of what I can only assume was a whole pig pulled into small pieces. You get two sides with it, so I had sweet potato fries, a portion a good 3 times a standard size, and macaroni cheese, which would be a generous full main serving anywhere else. Think it might be the first time I've been to a non-buffet restaurant and physically not been able to eat everything.
I'm in Leeds, where can I get said heart-stopper?
You met a dinner you couldn't finish?
I'm actually pretty impressed now. Where did you say this place was? -

Registered 15 years agoI remember walking into the shared kitchen in halls at uni, and seeing one of the quiet chinese people pouring coke over a big joint of ham. I thought it was a mental forren thing, glad to hear it's done over here though. -

The recipe they're talking of (the Nigella one) does actually require that ham is boiled in full-fat coke. Then you finish it in the oven, using the cooking liquid to baste it. Has to be REAL coke though. Pepsi doesn't work, nor does supermarket own-brands.
You're supposed to boil the ham in water and then finish cooking it by roasting it in coke to get a glaze. WTF have you people been doing?
You need to make sure that the (unsmoked - pretty important) ham is soaked in water overnight before cooking it though, otherwise it's really, really salty. Maybe that's where they went wrong.

High in sugar I guess. Maybe the fact it's carbonated is a factor. -

Registered 18 years agoMarmite, American mustard and sweet pickled onion sandwiches are awesome.
Sliced cucumber drizzled with malt vinegar and sprinkled with sugar.
Marmite & Philadelphia also works surprisingly well in a sandwich. -

The ham absorbs the flavour of the coke as it boils, the fat renders out into the liquid thickening the liquid and making it better for glazing. It's not just the coke though, you also chuck in an onion (and some cloves I think). It's more of a stock. The finished thing has a very barbecue-like taste with a sweet and sticky coating.
Boiling it in Coke is the worst kind of different-masquerading-as-clever bullshit. Why the fuck would you do that, what possible benefit comes from it?
IIRC she also suggests using the cooking liquid afterwards to make a bean soup. That was f*cking rank though. -

Registered 17 years agoI've done the coke and ham thing. Jolly nice so I think M83J01P97, your friend was doing it wrong. Definitely no black fat either.
Sausage and jam sandwiches are lovely. As commented here, meat and sweet berries just works, no one bats an eye lid at apple sauce with pork, or cranberry with turkey.
My fav quick food at the moment is Bloody Mary sardines, which makes people double take when I suggest it. River cottage recipe and it's just simple and yummy. -
Someone I know went there, advising that the portions were properly large and most people he saw couldn't finish what they got. Pre-meal stomach stretching and starving exercises are probably required the day before.

Bloody Mary sardines actually sounds quite nice. Reminds me of a modern variant on a prawn cocktail as well, which is a cerviche served in a glass with an ice-cold tomato, chilli, vodka and lime mix. -

"Real" Coke uses goose extract, rather than the cheap vegetable extract in Pepsi et all.
