    Do any of you REAL men smoke meat?

    Just ordered me a vertical water smoker, having used a smoke box on a gas BBQ for a few years. It's waiting at Argos for me and I'm so excited to ruin some perfectly good meat while I get the hang of it

    Yes, but with a pellet grill with wifi, so probably not a very manly fashion.

    Morrisons often has good deals - they have pork shoulder for £2/kg at the moment. Last summer they have brisket going cheap - if you asked at the counter they'd give you a whole one. The UK Facebook BBQ groups were full of men proudly displaying what looked like skinned and butchered labradors in Morrisons car parks.

    I have been removing skirting boards this week, with hammers and crowbars.

    I used to have one of these, very good, you can fit loads on. Charcoal varies a lot in quality, better stuff burns for longer.

    I had a similar one. I found it hard to regulate the temperature but then I'm an idiot and impatient. I tried to make pastrami and ended up with beef jerky (which was still actually very nice)

    Main thing that concerns me is the lack of air vents at the bottom. The coal pan basically has air all around it at all times so there's not much temperature control?

    Would I be right in thinking it's therefore better to make a small fire so I can add coal to it to make it hotter if need be, because cooling it down is going to be near impossible?

    I'm well aware you get what you pay for so I'm not grumbling, just trying to have plan for it

    I tested it out yesterday using one of those horrible instant light bags of charcoal and to be fair it got to the magic 220F without any difficulty whatsoever. It was only hot for a few hours though and again I'd have been fucked if it had gone too hot.

    What brand of coal do you recommend, or is a case of discovering what you can get for your money locally?

    Google "el cheapo brinkmann mods". Basically the same style as yours. There are tons of tips on how to get the best out of them.

    I thought 'smoking meat' was a form of curing it.
    These pictures make it seem like some variation of BBQ.

    What's going on? Is it being smoked and then slapped on a plate to be enjoyed hot, freshly smoked like a BBQ or is it being smoked and then stored in the pantry to enjoy for weeks to come?

    I'm obviously not a part of this manly in-crowd.

    Different types of smoking I guess... Smoked fish sounds more like what you're thinking of, but then there's slow cooking cuts of meat like brisket on a smoker, which is the correct manly way of doing things.

    @Salaman That's cold smoking.

    Barbecue is cooking low and slow over a smoker. There's no "like", that's what the word means.

    Most British people use the term to mean "grilling outdoors", but that's the difference between barbecue and grilling.

    Incidentally this is why the gas vs. charcoal debate is laughable when both Brits are referring to cooking burgers in two and a half minutes. The big difference between the two is smoke, but there's no time for the smoke to have any effect on a grill. Plus burgers and sausages wouldn't take any smoke no matter what you did to them.
